Chocolate Chip Cookies

I fancied a bit of a change from outfit photos, so I thought I'd post you a quick recipe! These cookies are amazing and super-quick so I thought I'd share it with you guys! I really love cooking so I'm thinking about adding more recipes to my blog- I'd love to hear what you guys think!


These cookies are one of my favourite things to bake. I'm not really a big baker- it's pretty much these or brownies! When it comes to cookies, I like simple, yummy and soft- these fit the bill perfectly. They don't involve a lot of effort and can be made super-quick. They also involve a lot of store-cupboard ingredients, so once you've bought everything for the first batch, you can have pretty much instant cookies! I baked them for my friends this weekend and they said they were better than Millie's cookies! I don't know about that but they are good! The recipe is from Cookie Magic by Kate Shirazi.
125g/9 tbsp butter
175g/scant 1 cup soft light brown sugar
1 large free-range egg
1 tsp vanilla extract
150g/1 generous cup plain (all-purpose) flour
1/2 tsp baking powder
pinch of salt (omit if using salted butter)
100g/4oz white, milk or dark chocolate, chopped into largish chunks

Preheat the oven to 180c/350F and line two baking sheets with greaseproof paper or silicone liners

Melt the butter in a large saucepan, then add the sugar and take the pan off the heat. 
Beat in the egg, add the vanilla extract, then sift in the dry ingredients, giving it a good old stir so you don't start cooking the egg. 
Stir in the chocolate chunks.

Spoon into little piles on the baking sheet, bare in mind that they spread quite a lot so leave a big gap between them (I ended up with one giant cookie!).
Bake for about 10 minutes. My advice is to go off the colour as they tend to harden quite a bit when they come out of the oven. They should be a nice golden yellow.
Leave for a few minutes before sliding them onto a wire rack or plate to cool.
Eat lovely and warm or leave to harden and cool
